Tomato Basil Soup

Let’s make something good.

1. Heat the oil in a saucepan. Cook the onion for 5 minutes over medium heat, stirring, until softened.
2. Add the garlic & cook for 30 seconds. Pour in the stock.
3. Add the tomatoes & simmer for 20 minutes. Add the basil off the heat.
4. Remove from the heat. Blend with an immersion blender, keeping the blade submerged. Season with pepper & serve.
